Abstract
13C solid state and solution state, high resolution n.m.r. spectra have been used to characterize wheat gluten both as dry solid and hydrated mass. Most peaks in the spectra have been satisfactorily assigned. Four different environments within the material have been distinguished corresponding to rigid immobile protein, mobile hydrophobic side chains, mobile lipid and a mobile protein fraction apparent in the hydrated material.
